Brad grew up in Memphis, but he briefly lived in Salt Lake City before coming back to Memphis. He was intrigued by a job listing from Chef Aaron Winters to learn charcuterie. He was always in the kitchen at any restaurant he worked before, but figured this would be something new and challenging since he enjoyed butchering already. After receiving the new position he was given the task by Andrew Michael Group to make a charcuterie program that was big enough to serve to customers outside of their restaurants. City Block Salumeria receives whole cows and whole pigs from MS and the whole process is done in house! They are not a slaughterhouse but they do know how to butcher every piece of a cow or pig and that my friends is quite impressive.
If someone didn't know much about charcuterie and its history I would say come see Brad at City Block Salumeria inside Porcellino's Craft Butcher. He explained to us how charcuterie is all about preservation to make things last longer. "Introducing people to that part of history is really cool. Canning and refrigeration kind of changed the way Americans see food, but that could all change with great quality meats from charcuterie." says Brad. We asked Brad what we would suggest for a beginners board and he said "Capicola, Duck prosciutto, salumi, and pork rillete." His favorites to serve at home are dry aged ribeyes and coppa with pickled items and cheese. It's not a charcuterie board without cheese.
